Chickpea Salad with Dijon Dressing

Serves 4

Chickpeas are an excellent way to introduce plant protein to your diet.  Just one cup contains a decent amount of protein and fibre, both of which help slow digestion, regulate blood sugar levels and appetite control.  The fibre in chickpeas, which is mostly soluble, helps increase healthy bacteria in your gut and supports digestive health.

What’s more, chickpeas are a rich source of nutrients that can help protect against depression and anxiety, such as magnesium, selenium, and zinc.

Ingredients:

  • 2 tins of chickpeas, drained more
  • 4 Artichoke hearts more
  • 4 sun-dried tomatoes more
  • 250g cherry tomatoes more
  • 4 spring onions more
  • A handful of chopped fresh basil more
  • ~ 1 tbsp chopped chives more
  • ~ 2 tbsp chopped parsley more

Dijon dressing – full recipe (see below)

Method:

  1. Add the chickpeas, artichoke hearts and sun-dried tomatoes in a serving bowl. Pour in the Dijon dressing and turn gently until coated. Cover and chill for 4 hours.
  2. When ready to serve, add the cherry tomatoes, spring onions, basil, chives, and parsley.
  3. Stir gently, then sprinkle with freshly ground black pepper.

Dijon Dressing

Ingredients: 

  • 3 tbsp extra virgin olive oil more
  • Juice from 1 lemon more
  • 1 tsp Dijon mustard more
  • 1 clove garlic, crushed more
  • Dash of sea salt more

Method:

  1. Put the dressing ingredients into a small bowl and whisk with a fork.
