Bircher Muesli

Oats are a great choice for breakfast. Because they are so rich in fibre, especially steel cut oats, they help you stay satiated for longer.  Oats are also a ‘heart-healthy’ food, shown to help balance blood glucose and improve your cholesterol profile. Combining it with live yogurt further improves the blood sugar support and appetite regulating benefits of oats because of the protein and live bacteria content of the yogurt.

Ingredients:

  • 100 g jumbo oats more
  • 4 tsp chia seeds, 4 tsp hemp seeds, 2 tbsp cold milled ground flax seed more
  • 2 tsp pumpkin seeds more and/or sunflower seeds more or a mix
  • 1 medium eating apple (grated) more
  • ½ tsp ground cinnamon more
  • 1 tbsp nut butter or chopped nuts (macadamias, almonds, pistachios, cashews) more
  • 100 ml grass fed live yogurt, plus 1 tbsp or more for serving if the muesli is too dry more
  • Fresh berries more

Method:

  1. In a medium bowl combine the porridge oats, chia seeds, flax seeds, hemp seeds, yoghurt, grated apple, and the ground cinnamon.
  1. Stir until combined, then cover and leave in the fridge to soak overnight.
  1. The next morning, spoon the Bircher muesli into 4 bowls.
  1. Top each bowl with a spoonful of the yogurt of your choice, sprinkle with pumpkin seeds and drizzle with maple syrup.
  1. Dust with some more cinnamon and serve with fresh berries.
